My favorite lunch in the Caribbean is the Tuna Nicoise at Le Case de l'Isle at Cheval Blanc's Hotel Isle de France.  Charming and sophisticated, yet low-key and relaxed.  Enjoy a fabulous lunch and then dip in the seafront pool.  January Doldrums?  I think not!  Tres Fantastique.

Then, finish the afternoon with a cocktail, sushi apps and sunset swim at Nikki Beach on the beach of Saint-Jean.  That's what I call a great day in St. Barts!  Au revoir January doldrums!
